Green Gold is an Extra Virgin Olive that has two certifications to validate its organic status. It also is a very good quality oil, with an acidity of less that 0.5. Low acidity is to extra virgin olive oils, that maturation is to Scotch whiskies and vintage is to fine wine.
It is extracted from the KORONEIKI olive type, which is one of the oldest and most revered olives, farmed since ancient Greek civilisation. Koroneiki is most suitable for producing top of the range quality extra virgin olive oil.
Green Gold is so named for the reason that it is organic and has an acidity that is no greaer than 0.5, which is very low - this is beneficial to health in that it contains most nutrients. The reason that the cost of Green Gold is higher than average, is down to the fact that in organic farming, there is more natural wastage - given the absence of preventative sprays. Since the yield is less, this is reflected in the cost, assuring you of an oil as nature intended.
The Koroneiki olives used for the production of Green Gold are less-than-ripe; this gives the olive oil a distinctive green colour, with an aroma of fresh olives and a pleasant grassy note followed by a peppery aftertaste.
Green Gold has the guarantee of the PEZA Union of Crete. This means that the EVOO is made solely by their producer members, using the most fertile olive tree orchards with the lowest acidity of the Peza region as well as by using the first olives of the harvest.
Prior to the extraction process the olive crops are carefully checked and selected in order to make sure there are no olive leaves mixed in or any over ripe olives which can affect the quality and taste of the olive oil. During the extraction process the temperature of the oil press is regularly monitored in order to make sure that the temperature does not exceed 25 degrees Celsius. If it does the acidity of the olive oil will affected. The crops are processed within 24 hours from harvest time.
Green Gold has the P.D.O Protected Designation of Origin status.
